Fish Curry – Method Two.
Earlier I shared my recipe for fish curry which is made in the South of Sri Lanka.
This recipe is how fish curry is made in Colombo and the rest of the Western province of Sri Lanka. The main difference is using lots of coconut milk. I learnt this recipe from my sister Ranga (Prasanga) who lives in Australia, and she is very famous among her friends for this curry.
300g fish cut into big pieces
7-8 red onions or B onion sliced
1 green chilli sliced
3 clove garlic chopped
2 tomatoes cut into cubes
1 teaspoon curry powder
1-2 teaspoons red chilli powder
small piece of cinnamon
¼ teaspoon turmeric
8-10 fenugreek seeds
2 medium size goraka
1o curry leaves and 1” rampe
1½ cup thin coconut milk
1 cup thick coconut milk
1 teaspoon salt
Put all the ingredients to the pan except thick coconut milk and cook covered with lid until fish is cooked through.
Then add thick milk and cook on medium heat until red oil appears on the top.
